Quince Jelly with a Twist recipe

Ingredients
quinces, chopped | |
water | |
300 ml | cranberry juice |
1 ½ kg | sugar |
Instructions
Combine quinces, water and sugar and bring to boil. Mash quinces with a fork as they are cooking until contents is reduced to a soft mush, 20-30 minutes. Strain through a muslin or an old thin large tea towel into a large basin. Leave to drain through, 4-6 hours.
Measure the liquid and pour it into your jam pan or a large saucepan. Add 500 g sugar per 350 ml of liquid or a little less if you find it too sweet. Simmer and stir continuously until completely dissolved.
Add the cranberry juice gradually, stirring as you go, until you reach a sharpness or sweetness that suits you. Bring to a boil.
After about 15 minutes test some syrup on a cold plate.
Ladle the liquid into a jug that pours easily into the small jar mouths and pour in to within 3-4 mm of the top. Screw on the lids.
