Ingredients

For the dough:
425 g flour
1 pack(s) yeast
250 ml lukewarm water
1 pinch(es) salt
3 tbsp oil
For the topping:
300 g crème fraîche
120 g grated cheese (Cheddar or Gouda)
½  lime, juiced
2 stalk(s) leek, sliced and blanched
250 g smoked salmon, diced
pepper
nutmeg

Instructions

Mix together the flour, yeast, water, a pinch of salt and the oil. Knead until the dough is smooth and pliable. Allow to rise for 30 minutes.

Preheat the oven to 230°C. Thinly roll out the dough on a lined baking tray.

Mix together the crème fraîche, cheese and lime juice. Season with nutmeg and pepper. Pour the sauce over the dough. Divide the leek and salmon on top. Bake for 10-15 minutes or until the crust at the borders is brown and crispy.

Serve warm or cold with a glass of white wine!
