Ingredients
3 | tomatoes, cored and roughly chopped |
2 small | courgettes, trimmed and sliced |
1 clove(s) | garlic, finely chopped |
2 sprig(s) | thyme, chopped leaves |
1 dash(es) | extra vergin olive oil |
salt and freshly ground black pepper | |
cayenne pepper |
Instructions
In a bowl, combine the oil with garlic and thyme and season with salt, pepper and cayenne pepper. In a small casserole dish, place tomatoes and courgettes, add the oil mixture and toss until the vegetables are well coated. Bake in the preheated oven at 250°C for 20 minutes.Serve lukewarm.
