Quick tuna pasta recipe details
Ingredients
200 g | dried pasta, more for hungry people! |
some | olive oil |
1 medium | red onion peeled and chopped finely |
2 ½ ml | red peppercorns, freshly ground, optional |
30 ml | white wine vinegar |
60 ml | dry white wine, such as Orvieto or Pinot Grigio |
1 dollop(s) | anchovy paste |
1 large can(s) | peeled tomatoes (ca. 400ml) |
1 large can(s) | tuna (ca. 200ml), preferably in olive oil |
salt and freshly ground black pepper, to taste | |
1 handful | chopped flat-leaved parsley, optional |
Instructions
Put the water on for the pasta, weigh out your chosen pasta and start cooking it at the appropriate time during the making of the sauce.Heat some olive oil in a heavy-bottomed pan; the quantity will depend on whether your canned tuna is in olive oil; if it isn’t, then drain the tuna and add a little more oil to the pan. Throw the peppercorns into the oil and allow to sizzle a bit. Add the onions, softening them over low heat without browning them – about ten minutes or so.
Clear a space in the centre of the pan, check that there is oil, and add the vinegar 5ml at a time, stirring until incorporated before adding the next spoonful. It will bubble away and give off acid fumes – take care. Then do the same with the wine, perhaps 10 ml at a time. Squeeze in a string of anchovy paste from the tube, stir well, add the tomatoes and cook for 10 minutes or so, chopping and stirring them as they cook.
When the pasta is nearly ready, stir in the tuna (breaking it up and mixing well) and check seasoning.
Drain the pasta and serve with sauce, scatter some parsley over it as desired; a little more olive oil drizzled over might be needed.
