Ingredients
Serves: 4- 1 cup breadcrumbs
- 1/4 cup chopped fresh basil
- 1 cup buttermilk
- 1/2 cup flour
- 4 chicken breast cutlets
- Salt and pepper
- 1/4 cup olive oil
Preparation method
Prep: 10 mins | Cook: 5 mins1. Set up dredging stations: a shallow pan with flour, a second pan with buttermilk, and a third with breadcrumbs and 2 tablespoons basil.
2. Sprinkle chicken with salt and pepper on both sides. Then dredge each chicken piece in flour, dip in buttermilk, then finally dredge again in basil breadcrumbs.
3. Pour oil into a large skillet and place over medium-high heat. Cook chicken in hot oil for 3 minutes, then flip and cook for 2 more minutes or until no longer pink in the middle.
