Pressure cooker chicken soup recipe details
Soup one can make within an hour that warms you up on a cold day. There are many different varieties of packaged rice dishes you can add, so experiment. Those with a chicken flavor work well, also the broccoli rice combinations.

Ingredients
Serves: 6- 5 pounds chicken pieces
- 5 stalks celery, chopped
- 5 carrots, chopped
- 1 onion, chopped
- 1 teaspoon dried parsley
- 1 teaspoon basil
- salt and pepper to taste
- 2-4 chicken bouillon cubes
- 1 package UNCLE BEN’S® Country Inn rice dish or 1 pouch Lipton(R) Rice & Sauce Dish
Preparation method
Prep: 20 mins | Cook: 40 mins1. Cook chicken in large pressure cooker for 30 minutes. Pressure cooker can be filled approximately 1/2 to 2/3 full with water. Let pressure cooker stand 5 minutes after removing from heat, then run cold water over pressure cooker to reduce heat.
2. Remove chicken pieces from liquid, saving liquid for soup stock. Cool stock and remove all fat from top. Drain stock through sieve to remove any small bone pieces. Debone all chicken and cut into pieces.
3. Place celery, carrots, and onion in bowl with parsley, basil, and 2 tablespoons water. Microwave until tender, about 5 to 6 minutes on full power.
4. Place stock, vegetables, and chicken in large kettle. Make additional liquid by using bouillon cubes per directions on package (probably 2 to 4 cups). Add pepper to taste. Add UNCLE BEN’S® Country Inn rice dish or Lipton(R) Rice & Sauce Dish. Cook as per instructions on package, taste test and serve. May be thickened if preferred.
