Ingredients

3 tbsp	water
16	prawns, peeled and deveined
100 g	rocket
2 tbsp	oil
200 g	redcurrants
1	shallot, chopped
1	red chili pepper, chopped
1 pinch(es)	sugar
1 tsp	cornflour
1 tbsp	Cassis
1 tsp	honey
	salt

Instructions

In a saucepan, heat half of the oil. Sauté the shallots until lucent. Add the redcurrants, chili, sugar, salt and the water and bring to a boil. Reduce the heat and simmer for 5 minutes. Strain the sauce into another saucepan. Mix together the cornflour and some water and stir into the sauce. Simmer until thickened. Season to taste with Cassis, honey and salt.

In a pan, heat the remaining oil. Fry the prawns briefly until pink and just done. Divide the rocket on serving plates. Top with the prawns and serve sprinkled with the redcurrant sauce.
