Prawns on rocket with redcurrant sauce recipe details
Ingredients
3 tbsp | water |
16 | prawns, peeled and deveined |
100 g | rocket |
2 tbsp | oil |
200 g | redcurrants |
1 | shallot, chopped |
1 | red chili pepper, chopped |
1 pinch(es) | sugar |
1 tsp | cornflour |
1 tbsp | Cassis |
1 tsp | honey |
salt |
Instructions
In a saucepan, heat half of the oil. Sauté the shallots until lucent. Add the redcurrants, chili, sugar, salt and the water and bring to a boil. Reduce the heat and simmer for 5 minutes. Strain the sauce into another saucepan. Mix together the cornflour and some water and stir into the sauce. Simmer until thickened. Season to taste with Cassis, honey and salt.In a pan, heat the remaining oil. Fry the prawns briefly until pink and just done. Divide the rocket on serving plates. Top with the prawns and serve sprinkled with the redcurrant sauce.
