Barbadian plain cake recipe details
Ingredients
300 g | sugar |
450 g | butter |
2 tsp | baking powder |
375 g | plain flour |
4 large | eggs |
1 tsp | vanilla extract |
1 tsp | almond extract |
480 ml | milk |
Instructions
Preheat oven to Gas Mark 6, 200°C, 400°F. Grease and flour a 10-inch, 25cm cake tin.Cream the butter and sugar in a large bowl until light and creamy. Add the eggs one at a time, beating well until thoroughly combined after each addition.
Sift the flour and baking powder into a bowl and then add to the butter mixture along with about half the milk. Beat to a batter and then add the remaining milk and the flavourings.
Bake for 50 minutes and then reduce the temperature to Gas Mark 4, 180C, 350C and bake for another 15 minutes. If a skewer inserted into the centre of the cake comes out clean, the cake is ready.
Remove from oven and cool in tin for 15 minutes. Turn out onto a wire rack to cool completely.
