Ingredients

750 g	potatoes, (small Roosters), skin on, brushed and cut into 2cm cubes
3 tsp	chopped herbs (e.g. parsley, chives, tarragon and marjoram)
100 g	breadcrumbs
125 g	streaky bacon, chopped
3 tsp	oil
1	egg white, lightly beaten

Instructions

Cook the potatoes in salted water for 10 minutes until almost tender. Drain and pat dry. In a bowl mix the herbs with breadcrumbs and the egg white. Season with salt and pepper. Add the potatoes and toss until well coated.

In a pan fry the bacon until golden and crispy.

In a separate pan heat the oil. Add the potatoes and fry until golden, crispy and cooked. Add the bacon and serve immediately, together with a fresh green salad of your choice.
