Crispy fried potatoes with herb and bacon crumble recipe details
|potatoes, (small Roosters), skin on, brushed and cut into 2cm cubes
|chopped herbs (e.g. parsley, chives, tarragon and marjoram)
|streaky bacon, chopped
|egg white, lightly beaten
InstructionsCook the potatoes in salted water for 10 minutes until almost tender. Drain and pat dry. In a bowl mix the herbs with breadcrumbs and the egg white. Season with salt and pepper. Add the potatoes and toss until well coated.
In a pan fry the bacon until golden and crispy.
In a separate pan heat the oil. Add the potatoes and fry until golden, crispy and cooked. Add the bacon and serve immediately, together with a fresh green salad of your choice.
