Potato salad recipe details
Classic and easy potato salad for picnics, a good side dish for barbeques, or just to eat any time. This was my mother-in-law’s recipe, which I loved from the beginning.

Ingredients
Serves: 6- 10-12 Russet potatoes, peeled and quartered
- 2 large sweet onions, diced
- 1 stalk of celery, diced
- 8 eggs, boiled and sliced
- 4 carrots, grated
- 1/4 cup sweet relish, optional
- 1 (16 ounce) tub sour cream
- 1 (3 ounce) package bacon bits (optional)
- 1 (64 ounce) jar Hellman’s Mayonnaise(R)
- 1 teaspoon paprika (for garnish)
Preparation method
Prep: 15 mins | Cook: 30 mins | Extra time: 6 hours, chilling1. Bring large pot of water to boil and cook potatoes until tender, about 15 minutes. Drain and chop.
2. In a large bowl, combine onions, celery, eggs, carrots, bacon bits, and relish. Add sour cream and mayonnaise.
3. Mix potatoes with the dressing and put in fridge overnight, take out when you want to serve it and sprinkle some paprika on top for color.
