A true man’s potato salad, with slices of steak mixed in. This has a light mustard dressing instead of the traditional mayo-heavy mixture.

Ingredients

Serves: 4
  • 3/4 pound small (1-2 inch wide) red-skinned potatoes
  • 6 cloves garlic
  • Salt and pepper
  • 4 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • Zest and juice of 1/2 lemon
  • 1 pound skirt steak, cut crosswise into 3 pieces, at room temperature
  • 1/2 red onion
  • 6 ounces baby spinach

Preparation method

Prep: 20 mins | Cook: 25 mins

1. Place potatoes in a saucepan. Crush two of the garlic cloves and add to the potatoes. Fill the saucepan with enough water to cover the potatoes by 1 inch, then add about 2 teaspoons salt. Turn heat to medium-high.
2. When water comes to a boil, turn heat down to medium and cook for about 20 minutes, until potatoes are fork-tender. Pour off water.
3. Mince one garlic clove and place in a large mixing bowl. Add 2 tablespoons olive oil, mustard, lemon zest, lemon juice, and salt and pepper to taste.
4. Pour 1 tablespoon olive oil into a cast-iron skillet and set over medium heat. Slice remaining three garlic cloves thinly. Cook sliced garlic in hot oil for about 1 1/2 minutes to brown, then remove from the skillet and set aside.
5. Add the final tablespoon of olive oil to the skillet and turn heat up to medium-high. Rub the steak pieces with salt and pepper, then cook in the skillet for about 8 minutes (for medium-rare). Flip once midway through cooking.
6. Transfer steak to a platter and let rest for 5 minutes, then slice.
7. Chop the potatoes roughly. Add to the bowl with the mustard dressing and stir to coat. Stir in the onion and spinach and toss. Divide between four plates.
8. Top each plate of salad with steak slices and crispy fried sliced garlic. Serve.
