Potato egg casserole recipe details
- Ingredients
- 2-1/2 cups boiled potatoes, cubed (do not peel)
- 1 medium onion, finely chopped
- 1 cup cottage cheese
- 2 cups Swiss or sharp cheddar cheese, grated
- 10 eggs
- 1 teaspoon salt
- Pepper to taste
Makes a nice, firm dish to keep warm on stovetop as people arrive at various times.
In bacon fat or butter, brown onions, then drain. Beat eggs. Combine potatoes, onions, cheese, eggs, and seasonings. Place in a greased (use non-stick cooking spray) 9 x 13-inch baking dish. Refrigerate overnight. Bake at 350 degrees for 1 hour or until eggs are set.
