Pork with mangetout recipe details
Ingredients
350 g | pork fillets |
olive oil | |
2 | shallots, sliced |
grated lemon zest | |
juice of 1 lemon | |
60 g | butter |
100 g | mangetout |
100 g | sesame seeds |
salt and pepper, to taste |
Instructions
Snap away and discard the tops of the mangetout, place into boiling salted water for 1 minute before draining and set aside. Heat frying pan, add the sesame seeds and sauté until golden brown. Spoon into a bowl and set aside.Add a bit of olive oil to the pan and fry the shallots and lemon zest over a medium heat for a few minutes until shallots begin to soften.
Season the pork with salt and pepper. Add pork to the pan and fry for a few minutes until the pork is golden brown.
Stir in the mangetout, sesame seeds, butter and lemon juice and cook for further 1-2 minutes.
