Ingredients
1 bunch(es) | greens, cleaned and chopped |
1 kg | pork collar, cut into 3cm cubes |
salt and freshly ground black pepper | |
3 tbsp | vegetable oil |
700 g | onions, chopped |
2 clove(s) | garlic, chopped |
2 tbsp | tomato puree |
3 tbsp | flour |
2 tbsp | mild paprika powder |
1 tsp | hot paprika powder, or more |
400 ml | dry red wine |
500 ml | beef stock |
Instructions
In a roasting tin, heat the oil. Fry the meat over high heat until browned all around. Remove from the tin and set aside. Add the onion and the garlic and fry over medium heat until golden. Add the greens and the tomato purée and cook stirring for 1 minute. Return the meat and season with salt and pepper. Dust with the flour and cook stirring for another 1-2 minutes. Add the paprika powder, deglaze with the wine and the stock and bring to a boil. Cover and bake in the preheated oven at 150°C for approximately 80 minutes.Before serving, check seasoning and correct if necessary. Serve with boiled potatoes or fresh bread.
