Pork curry with eggplants and bamboo shoots recipe details
Ingredients
| 2 tbsp | red curry paste |
| 1 | bay leaf |
| 500 g | pork fillet, cut into bite-sized pieces |
| 100 g | bamboo shoots, sliced |
| 400 ml | vegetable stock |
| 1 tbsp | lime juice |
| 1 tbsp | oyster sauce |
| 1 small | eggplant, cut into cubes |
| 1 tbsp | ginger, finely chopped |
| 1 tsp | green pepper corns |
| 3 tbsp | olive oil |
| 1 handful | basil leaves, chopped |
Instructions
Heat olive oil in the potjie over medium heat, add the curry paste and the bay leaf. Stir for a minute then add the meat and stir fry for further 3 minutes. Add bamboo shoots and eggplant and stir fry for another minute.Add the stock, bring to the boil and simmer for 10 minutes. Stir in the oyster sauce, lime juice, ginger and pepper corns. Taste. Stir in basil leaves and serve with rice.
