Brilliant cheese cake recipe details
Ingredients
500 ml | whipping cream |
1 large can(s) | condensed milk |
250 ml | cream cheese, smooth |
125 ml | lemon juice |
3 tsp | gelatine, powdered |
¼ cup(s) | water, hot |
1 large can(s) | peaches or other fruit, sliced and drained |
1 packet(s) | coconut biscuits |
some | butter, soft |
Instructions
Use a 20-22 cm round cake tin (loose bottomed or spring form).Line bottom with baking paper. Make a base with the crushed biscuits and soft butter. An easy way to crush the biscuits is to put them in a freezer bag and crush with a rolling pin.
Mix lemon juice, cream cheese and condensed milk.
Dissolve gelatine in the hot water. Add drained fruit (can be cut into pieces) to the cream cheese mixture. Keep some slices for decoration. Whip the cream and fold under the mixture. Add the gelatine last and stir well into the mixture. Pour into the cake tin and smooth the top. Once slightly set decorate with the remaining fruit slices.
This cheese cake freezes really well, once frozen solid it comes out the cake tin easily. Alternatively refrigerate until set and loosen around the edges of the cake tin with a knife dipped in hot water. I often make double the quantity and freeze one for unexpected occasions.
