Ingredients
4 medium | courgettes |
1 large | beef tomato |
2 clove(s) | garlic |
1 tsp | salt |
300 g | minced meat, beef and pork |
½ tsp | white pepper |
½ tsp | thyme |
2 tbsp | breadcrumbs |
1 | egg |
2 tbsp | butter |
For the sauce: | |
150 ml | vegetable stock |
1 bunch(es) | parsley |
1 | onion |
125 ml | crème fraîche |
salt and pepper |
Instructions
Trim the courgettes on both ends. Put into boiling water and cook for 3 minutes. Add the tomato in the last 30 seconds. Take out all vegetables and peel, seed and dice the tomato.Peel the garlic, sprinkle with salt and crush. Put into a bowl, add the minced meat, tomato, spices, thyme, breadcrumbs and the egg.
Cut the courgettes in half lengthwise and scoop out the flesh, leaving a shell of approximately ½ a cm. Chop the courgette flesh and mix into to the meat mixture. Knead until well combined.
Fill the courgette halves with the meat mixture. Place the courgettes into a greased casserole dish. Bake in the preheated oven (200 degrees) for about 30 minutes.
Chop finely parsley and onion. In a small saucepan, heat the stock and cook onion and parsley for 2 minutes. Stir in the crème fraîche, cook stirring for another minute and season to taste with salt and pepper.
Serve the courgettes with the sauce and fresh white bread.
