Pork artichoke and tava stew recipe details
- Ingredients:
- 1 to 2 cups fresh dill (important)
- 3 pounds pork cut in 1-inch cubes
- 3 pounds fresh fava beans
- 6 large onions
- 1 head garlic, chopped fine
- 4 to 6 small cans artichokes
- 2 cans large butter beans
- 1 large packages frozen peas
- 1 pint fresh crushed tomatoes
- 1 cup olive oil
Use large heavy stainless steel stewing pot (12 to 20 quarts). Salt and pepper to taste.
Place olive oil, meat and onions in pot and saute for 15 minutes or until beginning to look golden. Add tomatoes. Add fresh fava beans and cook for 10 to 15 minutes before adding other ingredients. Add remaining ingredients leaving peas until last. Simmer slowly until done, minimum of 1 hour.
Freezes well.
