Pork and vegetable casserole recipe details
Ingredients
8 small | pork escalopes, thinly cut |
salt and pepper | |
4 tbsp | butter |
1 bunch(es) | spring onions, sliced |
1 | red bell pepper, diced |
250 g | mushrooms, sliced |
2 | red onions, sliced |
150 ml | chilli sauce |
50 g | ketchup |
200 g | single cream |
100 g | cornflakes, slightly crushed |
100 g | freshly grated Cheddar cheese |
Instructions
In a pan heat 2 tablespoons of butter. Season the escalopes with salt and pepper and spread the upper side with a teaspoon of chilli sauce. Roll up the escalopes, fix with toothpicks and fry briefly in the pan until slightly golden all around. Arrange the rolls together with vegetables and mushrooms in a buttered casserole dish.Mix the remaining chilli sauce with the ketchup and drizzle the sauce over the ingredients in the casserole. Cover and leave to soak for 8 hours. Uncover and place into the preheated oven. Cook at 180°C for 15 minutes. Evenly pour over the cream and cook for 10 more minutes.
Mix the cheese with the cornflakes and sprinkle the ingredients in the casserole with the mixture. Put butter flakes on top and bake for 20 more minutes until golden brown and crispy.
