Ingredients
4 tbsp | basil pesto |
salt and pepper | |
½ | aubergine, sliced |
1 | courgette, sliced |
2 | tomatoes, sliced |
125 g | mozzarella, sliced |
4 | pork escalopes |
olive oil | |
2 tbsp | flour |
Instructions
In a pan heat 2 tablespoons of oil and fry the escalopes from both sides for 2-3 minutes. Season with salt and pepper. Transfer the escalopes onto a lined baking tray.Season the aubergine and courgette slices with salt. Dip the slices into flour and fry in oil until golden and crispy on both sides. Layer on top of the escalopes courgette, aubergine, tomato and mozzarella. Spread the cheese with pesto.
Bake in the preheated oven at 200°C for 10 minutes.
