Polynesian delight crab strata recipe details
- Ingredients
- 2 Tablespoons bread crumbs
- 8 slices white bread, cubed
- 1/2 pound fresh mushrooms, sliced
- 1/4 cup chopped green onions
- 1/4 cup Madeira (fruit wine)
- 8 ounces crabmeat
- 2-1/2 cups milk
- 4 eggs
- 2 cups shredded cheese
- 1/2 teaspoon dry mustard
- Freshly ground pepper to taste
Butter an 11 x 7-inch (2 quarts) baking dish and dust with bread crumbs; set aside. Saute mushrooms and onions in wine in skillet over medium heat, then stir in crabmeat. Place crab mixture and bread cubes in prepared baking dish, alternating layers and ending with bread cubes. Mix eggs, cheese, mustard, and pepper until thoroughly blended; slowly pour over bread cubes. Cover and refrigerate overnight.
In the morning, microwave to room temperature (3 to 5 minutes). Bake in a 325-degree preheated oven for 55 to 60 minutes. For more dishes, increase baking time about 15 minutes.
