A light and fresh-tasting dinner–healthy, too. Nothing goes better with fish than dill, which is the star of the creamy sauce that finishes off this wine-poached salmon.

Ingredients
Serves: 4- 1 1/2 cups water
- 1 cup dry white wine (ask at the wine counter for recommendations)
- 2 scallions, sliced
- 8 black peppercorns
- 4 (6 ounce) salmon fillets
- Fresh dill sprigs
- Sauce:
- 3/4 cup sour cream
- 1/3 cup peeled, diced cucumber
- 2 tablespoons snipped fresh dill
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Preparation method
Prep: 15 mins | Cook: 10 mins1. Combine water, wine, scallions, peppercorns, salmon, and dill in a large skillet. Set over high heat.
2. When liquids come to a boil, turn heat down to medium-low and place a lid on the pan. Cook for 6 minutes, until fish flakes easily.
3. Whisk remaining ingredients together in a bowl. Lift salmon out of poaching liquid and serve with sauce.
