Poached fish with cucumber recipe details
Ingredients1. Fresh Tilapia fillets (2)
2. bay leaf (1)
3. white wine (2c)
4. chopped fresh tarragon (2tsp)
5. prepared mustard (2tbsp)
6. whipping cream (1c)
7. peeled, halved lengthwise, seeded and chopped cucumber (2)
8. salt (to taste)
Method of preparation
1. Take cucumber pieces, sprinkle salt over the pieces. Keep them for 1 hour and then strain the liquid from the cucumbers.
2. Take a saucepan, place it over medium heat. Mix the whipping cream, mustard and tarrangon in a saucepan. Add the cucumber pieces and keep it to simmer for about 8 minutes.
3. Take a large frying pan, place it over medium heat. Pour wine in the pan, season it with salt and add bay leaf. Keep the wine to boil.
4. Add the tilapia into the pan and reduce the heat to medium-low. Cook the fish for about 8 to 10 minutes until the fish flakes easily with fork. Now serve the fish with cucumber on the side.
