Plum cake with custard recipe details
Ingredients
200 g | flour |
1 pinch(es) | salt |
80 g | sugar |
120 g | butter |
1 medium | eggs |
1 kg | plums |
2 medium | eggs |
75 g | icing sugar |
100 ml | whipping cream |
3 tbsp | apricot jam |
Instructions
For the Pastry:Mix flour, salt and sugar well. Add butter cut into pieces and crumble into the mixture with your fingers. Add eggs and knead quickly to a dough. Refrigerate for 30 minutes.
This pastry can be prepared in advance or frozen up to 1 month.
Roll the pastry out and put into a well buttered baking dish. Pinch with a fork. Wash plums and cut into quarters; line the pie with the fruits.
For the custard:
Mix eggs, icing sugar and cream and pour onto the fruits. Bake for 45 minutes at 200°. Heat Apricot jam and brush the cooled cake for glazing.
Note:this cake can also be made with apricots.
