Ingredients

2 tbsp olive oil
1 kg leek, trimmed and sliced
salt and freshly ground black pepper
2  eggs, hard boiled, peeled and chopped
lemon juice
1 tbsp mayonnaise
1 tbsp mustard
1 tbsp capers, chopped

Instructions

In a saucepan heat the oil. Add the leek and sauté for 5 minutes until soft. Divide the cooked leek on a serving plate and dress the leek with lemon juice, salt and pepper. Allow to cool.

In a bowl mix the eggs with capers, mayonnaise and the mustard. Season to taste with salt and pepper.

Spoon the egg mixture over the leek. Serve as a starter or on your party buffet.
