Belgian eggs with leek recipe details
Ingredients
2 tbsp | olive oil |
1 kg | leek, trimmed and sliced |
salt and freshly ground black pepper | |
2 | eggs, hard boiled, peeled and chopped |
lemon juice | |
1 tbsp | mayonnaise |
1 tbsp | mustard |
1 tbsp | capers, chopped |
Instructions
In a saucepan heat the oil. Add the leek and sauté for 5 minutes until soft. Divide the cooked leek on a serving plate and dress the leek with lemon juice, salt and pepper. Allow to cool.In a bowl mix the eggs with capers, mayonnaise and the mustard. Season to taste with salt and pepper.
Spoon the egg mixture over the leek. Serve as a starter or on your party buffet.
