Belgian Eggs with Leek recipe

|2 tbsp||olive oil|
|1 kg||leek, trimmed and sliced|
|salt and freshly ground black pepper|
|2||eggs, hard boiled, peeled and chopped|
|1 tbsp||capers, chopped|
In a saucepan heat the oil. Add the leek and sauté for 5 minutes until soft. Divide the cooked leek on a serving plate and dress the leek with lemon juice, salt and pepper. Allow to cool.
In a bowl mix the eggs with capers, mayonnaise and the mustard. Season to taste with salt and pepper.
Spoon the egg mixture over the leek. Serve as a starter or on your party buffet.
