Ingredients
For the yeast dough: | |
200 ml | milk |
50 g | butter |
375 g | flour |
1 packet(s) | active dry yeast |
50 g | sugar |
1 tsp | vanilla extract |
1 | egg |
For the filling: | |
100 g | marzipan |
1 pack(s) | instant semolina custard powder |
1 | egg yolk |
1 tsp | corn starch |
1 | egg white |
For the topping: | |
1 kg | plums |
4 medium | apples |
30 g | butter |
For the glaze: | |
4 tbsp | apricot jam |
1 tbsp | water |
Instructions
Heat the milk until lukewarm and melt the butter in the milk. Sieve the flour into a bowl and mix with the yeast. Add the sugar, vanilla extract, egg and the milk and butter mixture. Mix and knead until the dough is smooth and pliable. Cover with a kitchen towel and allow to rise in a warm place.Lightly flour the dough and knead again on a lightly floured surface. Roll out on a greased baking tray (30*40 cm). Place a cake frame around.
Roughly grate the marzipan and divide on the dough.
Cook the semolina pudding as advised on the package, then leave to cool. Transfer the cold semolina pudding into a bowl, fold in the egg yolk and the corn starch. Whisk the egg white until stiff, then fold in as well. Evenly divide the cream on the dough and flatten.
Preheat the oven to 180°C.
Halve and pit the plums and peel and core the apples and cut into thick slices. Layer the plums and apples in turn and overlapping on the semolina cream. Brush with melted butter.
Bake the cake for approximately 45 minutes.
Transfer the baking tray on a wire rack. In a small saucepan, mix the apricot jam with the water and bring to the boil, stirring. Brush the cake with the apricot glaze.
