Pizza rustica recipe details
Ingredients
phillo pastry | |
400 g | ricotta cheese |
100 ml | olive oil |
500 g | asparagus |
1 pinch(es) | salt |
Instructions
Wash asparagus and trim off ends. Cook asparagus in slightly salted water until tender. Drain. Cut into small pieces.Meanwhile mix together Ricotta cheese, oil and salt. Add asparagus pieces and mix to combine well.
Prepare baking dish with phillo pastry and spoon the asparagus cheese mixture onto the phillo pastry. Seal top and sides with the remaining pastry.
Preheat oven to 100°C.
Place dish in oven and bake for about 45 minutes or until top becomes golden brown. Remove from the oven and leave to cool to room temperature. Tastes even better the day after!
Serve hot or cold.
