Ingredients
360 g | flour |
1 pack(s) | active dry yeast |
200 g | milk |
4 tbsp | olive oil |
1 | egg |
2 pinch(es) | salt |
1 pinch(es) | sugar |
10 | olives, pitted and sliced |
1 piece(s) | of chorizo, app. 120g, cut into small cubes |
120 g | freshly grated Parmesan cheese |
5 | sun-dried tomatoes in oil, chopped |
1 tsp | mediterranean herbs, e.g. basil or herbs de Provence |
Instructions
Put the flour with yeast, sugar and the salt into a bowl. Add the egg, milk and the oil. Knead until the dough is smooth and pliable. Allow the dough to rise at a warm place whilst you chop the other ingredients.
Knock back the dough and knead in chorizo, olives, sun-dried tomatoes, the herbs and half of the cheese until well distributed. On a floured surface shape the dough to a roll and divide the roll into 6 portions. With floury hands shape the portions to smooth balls. Place into floured muffin cups. Allow to rise for approximately 30 minutes.
Preheat the oven to 180°C.
Sprinkle the dough balls on top with the remaining cheese and bake for approximately 20 minutes.
Serve the pizza muffins lukewarm or cold.
Variation:
You don’t like salami? Then create your own favourite pizza muffins according to your taste, e.g. with tuna or ham. Also vegetarian pizza muffins taste great!
