|4 tbsp||olive oil|
|10||olives, pitted and sliced|
|1 piece(s)||of chorizo, app. 120g, cut into small cubes|
|120 g||freshly grated Parmesan cheese|
|5||sun-dried tomatoes in oil, chopped|
|1 tsp||mediterranean herbs, e.g. basil or herbs de Provence|
Put the flour with yeast, sugar and the salt into a bowl. Add the egg, milk and the oil. Knead until the dough is smooth and pliable. Allow the dough to rise at a warm place whilst you chop the other ingredients.
Knock back the dough and knead in chorizo, olives, sun-dried tomatoes, the herbs and half of the cheese until well distributed. On a floured surface shape the dough to a roll and divide the roll into 6 portions. With floury hands shape the portions to smooth balls. Place into floured muffin cups. Allow to rise for approximately 30 minutes.
Preheat the oven to 180°C.
Sprinkle the dough balls on top with the remaining cheese and bake for approximately 20 minutes.
Serve the pizza muffins lukewarm or cold.
