Ingredients

1 piece(s) pizza dough, see my recipe in the database, 1/8 of the recipe
tomato sauce
Topping suggestions:
anchovy fillets in oil
mozzarella cheese
button mushrooms, sliced
bell pepper
eggplants, fried
salami
ham
bacon
eggs
pepper
oregano
olive oil
chili oil

Instructions

You need a gas BBQ grill with a lid, you may also be able to bake the pizza with a Weber charcoal grill with lid. If you have a pizza stone put it on the grill to heat up. I used a metal pizza tray with holes, this does not need to be preheated, but it has to be greased and sprinkled with flour.

Roll out the dough into a round form of 28-30 cm diameter. You may stretch it with your fingers first. Heat up your BBQ to at least 250°C. Transfer the dough onto the tray and bake for 5 minutes in the closed BBQ, heat on medium. Be sure to have the BBQ heated up to 250°C before!

After 5 minutes take the tray out and turn the dough over, it should have brownish dots and it should not be soft anymore. Spread some of the tomato sauce on the base and then layer the pizza with whatever you like. The ingredients here are just suggestions. A traditional pizza has just tomato sauce , anchovies, Mozzarella cheese , herbs and some olive oil as toppings.

Now transfer the pizza back into the hot BBQ, close the lid and bake for another 10-15 minutes depending on how thick your toppings are. I have a 3 burner gas grill, so I turned the left and the right burner on full and turned the middle one off. If you have a two burner grill turn them on medium.

Sprinkle with olive oil or chili oil before serving.
