Pesto chicken recipe details
Ingredients
1 | chicken breast, cut into strips |
2 slice(s) | red onion, kept in whole rings |
2 | mushrooms, sliced |
2 slice(s) | bell pepper, red and/or green, in strips |
1 small | courgette, cut in half lengthwise |
1 tsp | Pesto, preferably home made, heaped |
salt and freshly ground black pepper, to taste | |
olive oil |
Instructions
Assemble the ingredients as above for the requisite number of people. Brush the vegetables with olive oil. Place the measured amount of pesto into a bowl or cup depending on volume, add 1,5 teaspoons of olive oil per people and whisk together to make a marinade. Place the chicken strips in a bowl and sprinkle with salt and pepper, then pour over the pesto marinade and mix well. Leave to marinate for some time.Heat a griddle pan to hot and place the oiled vegetables on the pan round the edges. Then add the chicken in the centre of the griddle. Griddle until the underside of the chicken and vegetables are nicely brown and crusty, before turning over and repeat on the other side.
When done, serve immediately with French bread and butter and some salad leaves.
