Perch rolls with sweetheart cabbage recipe details
Ingredients
600 g | sweetheat cabbage |
1 | onion, chopped |
4 large | perch fillets |
200 g | crème fraîche |
150 g | red pesto |
400 ml | fish stock |
2 sprig(s) | thyme, chopped |
salt and freshly ground black pepper | |
100 ml | dry white wine |
10 | black peppercorns |
1 tbsp | butter |
Instructions
Remove 4 large leaves of the cabbage. Blanch briefly in boiling salted water, then drain on kitchen paper. Half the leaves lengthwise.Also halve lengthwise the fish fillets. Season with salt and pepper. Top each fillet with a cabbage leaf. Mix 150g of the crème fraîche with the pesto and spread the fillets with the mixture. Roll up the fillets and tighten with toothpicks.
Bring the stock with wine, thyme and peppercorns to a boil. Season to taste with salt. Reduce the heat and add the fish rolls. Cover and simmer for 10 minutes. Take out the fish rolls and arrange on a warmed serving plate.
Strain the sauce into another saucepan, whisk in the remaining crème fraîche, bring to the boil and season to taste with salt and pepper. Pour into a warmed sauce boat.
In a saucepan, melt the butter and sauté the onion. Stir in the remaining shredded cabbage. Season with salt and pepper. Cook over medium heat for 3-5 minutes.
Divide the cabbage beneath the fish rolls and serve together with the sauce.
