Ingredients
4 large | pears, peeled, cored, sliced into wedges |
4 tbsp | caster sugar |
1 | lime, juiced |
2 tbsp | honey |
100 g | rocket salad |
80 g | Parmesan cheese, grated |
some | water |
Instructions
Put the sugar in a shallow bowl and toss the pears in the sugar until evenly coated.Heat a large frying pan over medium heat. Lay the pears in the base in a single layer. Cook for about 3 minutes until the sugar coating begins to caramelise, then flip over each pear piece with a table knife and cook for another minute.
Sprinkle lightly with some water. Stir in the lime juice and the honey.
Remove the pan from the heat and divide the pears between four dessert plates.
Scatter each plate with rocket leaves and sprinkle with Parmesan cheese. Serve warm.
