Pear and ricotta muffins recipe details
Ingredients
Dry ingredients: | |
250 g | flour |
150 g | brown suagr |
2 tsp | baking powder |
tsp | baking soda |
½ tsp | salt |
100 g | granulated sugar |
Wet ingredients:>/b> | |
2 large | eggs |
250 g | ricotta cheese |
2 tsp | vanilla extract |
4 tbsp | butter, unsalted, melted |
Fruit:: | |
4 | pears, peeles, cored, chopped |
juice of 1/2 lemon |
Instructions
Combine all dry ingredients in a bowl and mix well.Combine all wet ingredients in a bowl and mix well.
Place chopped pear into a bowl and sprinkle with lemon juice. Toss.
Grease muffin tins and preheat oven to 180°C.
To mix the batter, pour the wet ingredients into the dry ingredients. Using a rubber spatula or an electric mixer, fold the mixture together. Do not over mix.
Add the fruit to the batter and gently fold to incorporate.
Divide the batter evenly between the 12 muffin cups and place muffins directly into the oven. Bake for approximately 20-25 minutes, or until a skewer inserted into the middle comes out clean.
Let the muffins cool for at least 15 minutes in the tin. Remove and serve.
