Incredible taste combination of tangy dressing over sweet pears, smokey bacon, crisp nuts, and good-for-you spinach.

Ingredients

Serves: 6

• For Dressing:
• 1/3 cup olive oil
• 2 tablespoons seasoned rice vinegar
• 1 clove garlic, crushed
• 1/4 teaspoon salt
• 1 or 2 tablespoons Dijon mustard, to taste
• For Salad:
• 1 (10 ounce) bag fresh spinach
• 2 or 3 large ripe Bartlett pears, cored, quartered, sliced
• 1 avocado, peeled and diced
• 3 or 4 strips bacon, cooked crispy and crumbled
• 1/2 cup pine nuts or other nut, toasted
• 1/2 cup dried cranberries
• 1/4 cup sliced fresh mushrooms, if desired

Preparation method

Prep: 20 mins

1. In a small bowl, whisk together all the dressing ingredients and let the flavors combine for about 5 minutes.
2. Combine spinach, pears, avocado, bacon, pine nuts, dried cranberries and mushrooms in salad bowl.
3. Drizzle the dressing over salad; toss before serving.
