Incredible taste combination of tangy dressing over sweet pears, smokey bacon, crisp nuts, and good-for-you spinach.

Ingredients
Serves: 6
- For Dressing:
- 1/3 cup olive oil
- 2 tablespoons seasoned rice vinegar
- 1 clove garlic, crushed
- 1/4 teaspoon salt
- 1 or 2 tablespoons Dijon mustard, to taste
- For Salad:
- 1 (10 ounce) bag fresh spinach
- 2 or 3 large ripe Bartlett pears, cored, quartered, sliced
- 1 avocado, peeled and diced
- 3 or 4 strips bacon, cooked crispy and crumbled
- 1/2 cup pine nuts or other nut, toasted
- 1/2 cup dried cranberries
- 1/4 cup sliced fresh mushrooms, if desired
Preparation method
Prep: 20 mins
1. In a small bowl, whisk together all the dressing ingredients and let the flavors combine for about 5 minutes.
2. Combine spinach, pears, avocado, bacon, pine nuts, dried cranberries and mushrooms in salad bowl.
3. Drizzle the dressing over salad; toss before serving.
