Pea pod soup recipe details
Ingredients
1 lb | garden peas, pods only! |
2 | butter |
1 pint(s) | chicken stock (1 – 2 cubes) |
salt and freshly ground black pepper, to taste |
Instructions
After shelling the peas, cut up the pea pods with a pair of scissors into a non-stick pan. Add the butter and place on a low heat, cover and sauté the pea pods about 15 minutes, until the juices are starting to run and the pods are soft.Pour in the stock and simmer for 20-30 minutes.
Allow to cool slightly and blitz with a stick blender. Pour the soup in batches through a sieve, rubbing to get the flesh through but to keep the fibres in the sieve.
Season the soup with salt and pepper to taste and give one final brief blitz. Reheat and serve with a few peas as garnish.
Note:
This also works for broccoli stalks and the woody ends of asparagus spears.
