Pasta with Minced Meat and Tomato Sauce recipe

|1 tbsp||olive oil|
|400 g||minced beef|
|salt and freshly ground black pepper|
|2 tbsp||tomato puree|
|100 ml||vegetable stock|
|8 sprig(s)||thyme, chopped|
|freshly grated Parmesan cheese|
In a saucepan, heat the oil. Fry the minced meat, stirring occasionally, until brown and crumbly. Add the greens and the onions and cook stirring for 6-8 more minutes. Stir in the tomato purée and cook for another minute. Add the tomatoes and the stock and bring to a boil. Season with salt, pepper, sugar, paprika powder and thyme. Reduce the heat, cover and simmer for approximately 2 hours.
Cook the pasta in salted water until al dente, then drain. Check the seasoning of the sauce and correct if necessary. Serve with the cooked pasta and add Parmesan cheese for the table.
