Pasta with a Spicy Vegetable Sauce recipe

|¼ bulb(s)||celeriac, peeled and grated|
|1 bunch(es)||spring onions, diced|
|3 clove(s)||garlic, minced|
|50 g||black olives, pitted and sliced|
|10||tomatoes, peeled and diced|
|50 ml||olive oil|
|2 tbsp||tomato puree|
|salt and pepper|
In a saucepan, heat the oil and sauté the onions, garlic and spring onions until lucent. Add the carrots, celeriac, olives, tomatoes and the tomato purée and bring to a boil. Reduce the heat and simmer for 10 minutes. Season to taste with paprika, chili, curry, salt, pepper and sugar.
In the meantime cook the pasta in salted water until al dente. Drain, add to the sauce and toss. Serve immediately.
