Powell's simmered bacon pork loin recipe details

Ingredients
Serves: 6- 4 pounds pork loin
- 1/2 pound bacon, chopped
- 4 cloves garlic, minced
- 2 large white onions, chopped
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 2 bay leaves
- Juice of 1 lime
- 1 tablespoon olive oil
Preparation method
Prep: 10 mins | Cook: 3 hours1. Mix salt and pepper. Rub all over pork loin.
2. In large, deep pot, such as a Dutch oven, heat oil and stir-fry bacon for 4 minutes over medium-high heat.
3. Add the minced garlic, chopped onions, bay leaves, and pork loin. Brown meat on all sides, about 10 minutes.
4. Pour lime juice over pork loin, cover, and cook over low heat for 3 hours or until meat is tender.
