Ingredients

300 g pasta
2 medium leeks, sliced
1 medium zucchini
250 g mushrooms, chopped
240 ml sour cream
60 ml white wine
1 tsp tarragon leaves
½ tsp salt
olive oil

Instructions

Heat oil over medium heat in a large frying pan. Sauté the leeks, mushrooms, and zucchini for 5 minutes. Add the wine and simmer for another 5 minutes.

Stir in the cream, tarragon and season with salt. Bring to a boil and simmer until thickened.

Cook the pasta al dente and drain thoroughly. Add pasta to the vegetables, toss well and serve.
