Pasta with green vegetables recipe details
Ingredients
125 g | mangetout |
25 g | green olives, pitted and sliced |
2 | spring onions, sliced |
4 sprig(s) | parsley, chopped |
1 tsp | red chili paste |
20 g | freshly grated Parmesan cheese |
1 tsp | oil |
75 g | pasta |
salt and pepper | |
3 tbsp | water |
Instructions
Cook the pasta in salted water until al dente. Drain, but collect some of the cooking water.In a pan heat the oil and the water. Steam the mangetout until the liquid has evaporated. Add the spring onions and the olives and cook stirring for a minute. Add 5 tablespoons of the pasta water, chili paste, parsley and the cooked pasta and toss. Season to taste with salt and pepper.
Serve sprinkled with the Parmesan cheese.
