Pasta with salmon recipe details
Ingredients
300 g | pasta, like tagliatelle |
some | rocket, optional |
For the sauce: | |
400 ml | fish stock |
1 small | onion |
3 clove(s) | garlic |
3 small | red chillies |
1 tbsp | butter |
200 ml | cream |
1 tbsp | cream cheese |
salt and pepper | |
For the salmon: | |
300 g | tomatoes |
250 g | smoked salmon (I took hot smoked one) |
some | butter or ghee |
salt and pepper | |
To garnish: | |
2 tbsp | trout caviar |
1 sprig(s) | lemon balm |
Instructions
Pour fish stock into a pot, use medium heat and boil down to about 50 ml. Chop onion and garlic, remove seeds of the chilli and cut into very small cubes.Heat butter in a pot, sautée onion, garlic, chilli for a few minutes. Add the reduced fish stock and the cream, stir well and heat until it almost reaches the boiling point.
Squeeze the cream cheese and add, mix well with the sauce. Let the sauce simmer for about 10 minutes, season with salt and pepper.
Scoop out the tomatoes, cut the meat into small cubes. Cut salmon into small pieces, about an inch big.
Cook pasta and keep it warm.
In a big pot, heat butter and add salmon and tomatoes, sautée for a few minutes and season with salt and pepper. Add pasta (and, if you like, the rocket), mix carefully, and add the sauce. Arrange on plates, add some caviar and sprinkle with lemon balm leaves.
