Ingredients

1	onion, chopped
1 tbsp	oil
1 tbsp	flour
200 ml	vegetable stock
100 ml	milk
100 g	single cream
200 g	Gorgonzola
	salt and freshly ground black pepper
100 g	rocket
400 g	pasta

Instructions

In a saucepan, heat the oil. Sauté the onion. Dust with the flour and cook stirring for 1-2 minutes. Pour in the stock, milk and the cream and bring to a boil, stirring constantly with a wire whisk. Reduce the heat and simmer for 10 minutes. Add the cheese and cook stirring until melted. Season to taste with salt and pepper.

Cook the pasta in salted water until al dente.

In a warmed bowl, mix the drained pasta with the sauce and the rocket and serve immediately.
