Pasta with carrots and peas recipe details
Ingredients
200 g | peas |
300 g | baby carrots, sliced |
2 | shallots, sliced |
1 bunch(es) | parsley, chopped |
3 tbsp | oil |
2 tbsp | lemon juice |
salt and pepper | |
400 g | pasta |
150 g | crème fraîche |
1 tsp | mustard |
200 g | grated cheese (Cheddar or Gouda) |
Instructions
Cook the pasta in salted water until al dente. Cook the peas in boiling water for 1 minute, then strain.In a saucepan, heat the oil and fry the shallots until lucent. Stir in the carrots and the peas and cook for 2-3 minutes. Season to taste with lemon juice and salt. Remove the vegetables from the pan, cover and keep hot.
Pour the crème fraîche into the pan. Simmer over low heat for 2-3 minutes. Stir in the mustard and the parsley. Season to taste with salt, pepper and lemon juice.
In a bowl, combine the vegetables and the pasta and pour over the sauce. Sprinkle with cheese and serve.
