Ingredients
50 g | pine nuts, roasted |
2 medium | courgettes, diced |
1 bunch(es) | basil, chopped |
100 g | freshly grated Pecorino cheese |
4 tbsp | olive oil |
400 g | pasta |
1 clove(s) | garlic, minced |
salt and freshly ground black pepper |
Instructions
Cook the pasta in salted water until al dente.In a pan, heat the oil. Fry the courgettes until soft and golden. Add the pine nuts, the basil, garlic and the cheese and cook stirring for 1-2 minutes. Stir in a ladle of the pasta cooking water. Season to taste with salt and pepper.
Drain the cooked pasta, combine with the sauce and serve immediately.
