Ingredients

4 slice(s) veal escalopes
90 g butter
½ large lemon, zest only
3 tbsp white wine
3 tbsp chicken stock
2 tbsp cream
1  egg yolk
1 pinch(es) ground mace
salt and pepper, to taste
seasoned flour

Instructions

Remove any excess fat from the escalopes. Enclose between two layers of cling film and beat to thin and tenderise them. Roll in seasoned flour.

Heat the butter in a pan and, when foamy, brown the escalopes thoroughly on both sides. Add the zest and mace and pour the wine and stock over the escalopes and gently simmer for about 20 minutes or until tender.

Remove escalopes to a warmed dish. Beat the egg yolk with the cream and stir into pan juices. Reheat, stirring well but do not allow to boil. Pour over the veal and serve immediately with vegetables of choice.
