- Ingredients
- 2 eggs (or egg substitute equal to 2 eggs)
- 2/3 cup fresh orange juice
- 1/3 cup low-fat milk
- 1 teaspoon orange extract
- 1/4 cup sugar
- 1 Tablespoon grated orange rind
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg
- 1 loaf of French bread cut into 1-inch slices
- 1/2 cup chopped pecans
Mix together the eggs (or egg substitute), orange extract, orange juice, milk, sugar, grated orange rind, nutmeg, and vanilla. Place the bread in a large baking dish after spraying the dish with a non-stick cooking oil and pour the mixture over the bread. Cover and refrigerate overnight.
The next morning, remove from the refrigerator and pre-heat oven to 350 degrees. Sprinkle the toast with the pecans and place in the oven. Bake for 25 minutes or until the edges are golden. Remove immediately from the baking dish and serve hot.
