Pasta with a creamy vegetable sauce recipe details
Ingredients
80 g | pasta |
salt and pepper | |
1 medium | carrot, diced |
100 g | peas, frozen |
1 | shallot, chopped |
1 tsp | butter |
1 tsp | flour |
50 g | cream cheese |
1 tbsp | parsley, chopped |
200 ml | vegetable stock |
50 g | yoghurt |
½ tbsp | chives, chopped |
Instructions
Cook the pasta in salted water until al dente, then drain the pasta.In a saucepan heat the butter and sautee the shallots until lucent. Sprinkle with the flour and cook for 1-2 minutes. Pour in the vegetable stock and cook stirring for 3-4 minutes. Add the carrots and cook for 5 more minutes. Add the peas and cook another minute. Take from heat and stir in the yoghurt, cream cheese, parsley and chives. Season to taste with salt and pepper.
Serve the cooked pasta with the creamy vegetable sauce.
