Pasta and zucchini with tomato sauce recipe details
Ingredients
80 g | sundried tomatoes in oil |
250 g | single cream |
1 | beef tomato |
150 g | broccoli, in florets |
300 g | zucchini |
salt | |
400 g | tagliatelle |
40 g | freshly grated Parmesan cheese |
Instructions
Drain the sundried tomatoes and add them to the single cream, add also 1 tablespoon of their oil. Bring to the boil, then simmer over low heat for 10 minutes. Purée with a hand blender.Place the beef tomato for 30 seconds into boiling water, chill in cold water, then peel, remove the kernels and dice the tomato. Blanch the broccoli florets until tender. Stir the vegetables into the tomato and cream mixture.
Wash the zucchini, cut off the ends and cut the zucchini lengthwise in thin slices. Cook the Tagliatelle in salted water until al dente. In the last two minutes cooking time add the zucchini stripes. Drain, however collect the liquid. Rinse the zucchini pasta mixture with hot water. Drain again.
Add some of the cooking water to the tomato sauce if the sauce is too thick. Season the sauce to taste with salt and pepper.
Serve the zucchini and pasta with the sauce, sprinkled with Parmesan cheese.
