Pasta verdura recipe details
Ingredients
500 g | pasta |
2 | onions, chopped |
2 clove(s) | garlic, minced |
2 | carrots, sliced |
2 small | courgettes, sliced |
200 g | mushrooms, sliced |
125 g | mangetout |
15 | coriander seed |
3 tbsp | olive oil |
100 g | fresh peas |
salt and pepper | |
100 ml | white wine |
4 tsp | honey |
3 tbsp | single cream |
Instructions
Crush the coriander seeds. In a pan, heat the oil. sautee the coriander, garlic and the onions for 2 minutes. Add the carrots and cook stirring for 5 minutes. Add the mangetout, peas, courgettes, the mushrooms and the wine, cover and cook for 2-3 more minutes. Season to taste with salt, pepper and honey. Stir in the cream and cook without the lid for another minute.Cook the pasta in salted water until al dente. Drain. Mix with the vegetables and toss gently. Serve immediately.
