Pasta spirals in wine sauce with dry fried fillet strips recipe details
Ingredients
500 g | pasta spirals |
2 medium | aubergines |
1 medium | red onion, chopped |
4 tbsp | olive oil |
1 clove(s) | garlic, crushed |
1 medium | green pepper, chopped |
250 g | tomatoes, chopped |
2 tbsp | chopped fresh basil |
0.2 l | white wine |
salt and black pepper from the grinder | |
500 g | beef fillet strips |
pinch(es) | of chilli powder |
Instructions
Dry fry the beef strips in a frying pan and sprinkle with the chilli powder. Set aside.Dice the aubergine, salt it and let it stand for 30 minutes. Rinse it, dry with kitchen paper and set aside.
In a large sufuria, sautee the onion in 1/2 the oil on low heat, go to medium heat, add in the aubergine and garlic and after 3 minutes the green pepper, tomatoes, basil and wine. Cover and cook on med-low heat for about 25 minutes. Remove lid, stir slightly and cook on low heat for another 5 minutes, stir carefully and add salt and pepper to taste if necessary.
Meanwhile cook the pasta according to instructions on the packet. When the pasta cooks drain it and immediately place it into a warm pot with the remaining oil, little salt and black pepper and toss gently. Put the pasta on a serving platter and cover it with the sauce.
Garnish with the beef strips.
